there is a group of wires in thin plastic that run directly over the top of the Isuzu engine. Is there a modern product to wrap these in to protect from heat?

The top of the engine (valve cover) isn't really all that hot, and anything you use will come to the same temperature inside as out within a few minutes. I chose to replace some wires with Tefzel aircraft wire where they had rested on places that got too hot. Then, keep them in a loom that has some air space so they don't rest on the metal. There is something like what you mentioned, it's made of orange silicone rubber with a soft fiberglass lining and called firesleeve. You can get it at Parker hose shops or aircraft supply places. It is not cheap. The fiberglass lining provides some heat insulation because it makes an air space.
