FC 19 countertop extension ideas?

Hi
One of the few things that we actually find small in our 19 is the countertop. We camped around Europe in several campervans, therefore this unit fells like the Taj Mahal to us, but with tow kids we find it challenging to prepare meals in the absolute absence of countertop space (unless you do not use the sink). We have been thinking on using a board runnign over the backrest of the bench next to the kitchen, that could be attached with the same hooks as the folding table, but I am afraid to make holes or to carry to much weight over the walls.
Any experiences in this sense?

We use the dinette table most of the time. Still close to the cooking action!

Added one of these to our Bambi which adds some space over the back seat of the dinette.

Don't have a photo with it extended, but it mounted to the right side of the sink toward the back of the counter. It's only 12"x12" but allowed some extra space for drying dishes, etc. Also add a stove top cover for more space when not using the stove.

This is basically what the Classic trailer has for a counter top extension. You should be able to get all of the parts from AS (381614 FOLDING SHELF BRACKET). Of course if you lean on it, it will bend and rip the screws out. I've reinforced mine with bolts and nuts to ensure this doesn't happen again.
