The newer classics with larger awnings are clearly not designed to be out in the rain. Even with our awning tilted (electric tilt), it will hold rainwater and accumulate. We have to put our awning in when it rains.

If camping for several days, when you put up the awning at night (or when leaving or when weather suspect), do you just let it roll up —*is that good enough? —*or do you do the full job, securing with the wheels and the hook in the middle, same as you'd do if you were hitting the road?

At least use the hook lock near the center. And even a shorter person can hand tighten the wheel by the door. Just stand on the top step or the floor of the Airstream and reach up. Being left handed is an advantage with an FB.

Nah, rolling it up is good enough unless I was staying on a wide-open plain. Then I might use the hook, but not the wheels.

I'd say it was a med. rain when we were in town and the awning was in sag mode, between us and the insurance company that was a 4,500 repair.

This!
I get great pleasure from sitting outside my Airstream in heavy heavy rains (recently in Myrtle Beach) but, importantly, little to no wind. As long as you have it tilted, the water pours right off of it and it bears little more force than normal.

I would point out that you, like us with our 19', have a relatively short awning...which makes pooling of water easier to control. That said, we always tilt our awning by one hole away from the door when we enjoy a rain with no wind.
We also use a strap set up with we want to stabilized the awning in light breezes ... I've included picture of the one we use below...pretty low-tech, easy to use and inexpensive.
It's important thet you are able to detach the strap and rioll up your awning quickly. The strap we use can be released with one quick action and it's easy to re-install later when things calm down. We also think about being ab le to pt the awning away quickly when we decorate with lights, etc...easy-off is the key.
