Just really enjoyed your pictures of the activities`
Even tho we didn't bring our A/S to spend the weekend, I enjoyed the business meeting..The whole slate of officers showed much professionalism in the manner the business was conducted.
Sorry we missed the "polisher" going at it...Maybe next time..
As usual, it was fantastic seeing our new "old" friends...In that sense, it does seem as if we've all been great friends for many years.

Also, thank-you to all the NEU members who attended our important spring business meeting and important name change voting -- there were 24 voting members in attendance and 23 members voted against the name change and one member abstained. The 23 votes against the name change translates into 125 votes against the name change.

(Voting results are based on 24 voting NEU members but such vote is expressed as a percentage of the votes for or against and the results applied to the total entitled regular member vote count of the unit which is 130 members.)

Great Time!

Thanks to our hosts for putting on a great event. Silvie, Gim, and Mrs. Muddy_Hollow all had a great time catching up with old friends and meeting new members.

The location was great and it only took us about 1.5 hours to get home. This was the first trip that we did not go over 55mph and none was done on the highway. Loved it, nice leisurely drive.

Hey Hiker: I think my dog is still worn out from Saturdays hike. He was passed out on the floor for most of yesterday afternoon.

For anyone interested, this was my first weekend towing with our ol Land Rover Disco II. Albeit the suspension has been upgraded from the air bags, the towing and the overall ride was better than my Toyota Tundra. I even think I got better mileage!


Over 59: Way coooooool rig... found online that little switch you have on the front. Neat idea!!!

We did it again!

I need a week to recover from my weekend. We got home with no problem, the way the campground owners told us to get back was much easier than the way we got there. No traffic problems for us, saw loads of cars crawling up 495 and then Rte. 6 West I was so tired when we got back, after a quick unpack and shower I took a 3 hour nap in the trailer while Mista and the kids went next door for the bbq.

I'm so glad we have our chefs for the Tin Chef Cook-Off, I can't wait to see what creative things they'll do at Alumination.

Leon and Jim, you light up my life/trailer, literally. PeeGreen thank you for making my flags compliant, you know the stress that caused me this weekend. The hike was fun, hooray to Silv for getting her Junior Ranger badge. Grill together night was a hoot, muddy, over59, ElaineL we did a fine job pairing our different wines together. We had so much fun with all of you, especially loved the wonderful fires at night with great conversation and friends.

Remember to send me your best digitals so that I can put together the history book so we'll be able to look back and remember the fun we had.

A little more than 3 weeks to Scusset, can't wait. We'll do it all over again.

I will fess up...the "rumors" are true...it was my other half that consumed six of the poppers!

I won't publically interject any more black-tank humor on this subject (even tho there is lots of it) because my other half does periodically read the forum threads (message for my other half..."Hi, honey! I'm trying hard to be good!").

Not for the faint of heart

Here ya go.

Stuffed Jalapeno Poppers

1 lb ground pork (can substitute sausage, hot if you’re brave)
2 (8 oz) packages cream cheese, softened
30 Jalapeno Chile Peppers
1 lb, sliced bacon, cut in half
Salt and Pepper to taste.

First and foremost, you MUST WEAR rubber gloves when preparing the peppers, the seeds are mean! Cut jalapenos in half lengthwise and remove the seeds.
HINT: a baby spoon works wonderful to scrape out the seeds and membrane.

Preheat oven to 375 degrees.

Place ground pork in skillet, cook over medium high heat until evenly browned.

Mix pork, seasonings and cream cheese and stuff each jalapeno pepper. Wrap with half slices of bacon. Secure bacon with toothpicks.

Bake peppers in large, shallow pan for approximately 20-30 minutes or until the bacon is brown and peppers are soft.

Enjoy.
