I think it's time to start the food list for the Saturday potluck. For those of you coming for the first time, here's what we do.

Late Saturday afternoon we will set up an eating area inside the F camping area. We will gather enough tables from the surrounding sites to be able to have a food serving area and a separate eating area.

We ask each camping unit to provide a side dish or desert. Make enough to share with at least 6 others. You make your own entree but you do not share that. This gives everyone their own main dish, and a choice of lots of sides and deserts. It works well and we always have lots of food. They key to all this is it all starts at 6pm. So if you are making steaks for your entree, don't start cooking at 6.

We will all be eating and you will be still cooking! Note you need to also supply your own drinks, plates, and eating utensils. Also if needed for your side item, be sure to supply a serving utensil. If you have a table cloth that we can borrow that would be nice.

The only thing I ask of the guys is to help me gather and borrow some tables from your sites so that we can have the group tables. We do that at 5pm and it doesn't take more than 10 minutes. Usually we pull the tables from the F sites closest to our planned eating area and those in the P sites which are closest. Those tables are heavy! Note that once we finish dinner we will bring the tables back to your site.

After getting the tables back into place, we will start setting up for movie night in the same area. At dusk the movies will start. Be sure to bring lawn chairs!

So to keep things organized and so we don't get 20 identical side items, we do the list. So feel free to post what you think you will bring. I'll cut and paste your items into one list, similar to the who is attending list and probably will update that daily as we get closer to our date.

I will be posting more details about the weekend and while I will try to get to see everyone, make sure you see me when you get there to pickup a newsletter/flyer that will give you my most to update list of atendees and sites, plus the rally schedule and other information.

We'll bring Frog Eye Salad For Friday night and a vegetable dish for Saturday night. Don't know what yet, need to see what the temps are going to be.

I will also bring a big container of Community Cookies to share. I'm thinkin' chewy Molasses Crinkles this year.

My wife will bring "puppy chow". This is a dessert for humans, made with chocolate, so not for our four leg friends. It is always a big hit with the kids, young and old.

On a side note, this is our first time camping with a large group. Aside from the normal things we bring, when camping by ourselves, is there anything else we need to bring?

Tim and Pam, really nothing else to bring. You might consider a water carrier if you need some additional to replenish your tank. Note that the water does carry some sediment so a screw on the spigot filter makes a big difference. I'm assuming you carry a couple of lawn chairs since most of the folks congregate together in the F loop closer to the lake.

I had a pm asking about Frog Eye Salad, and for the recipe, so am posting it here. It came from a church cookbook given to me by my Iowa mother-in-law, and has become a favorite summer potluck food for our family. The acine de pepe is a tiny, round pasta, which looks like frog eyes when cooked.

FROG EYE SALAD

6 ounce box acine de pepe, cooked, drained, rinsed, drained again and cooled

3 large cans mandarin oranges, drained
2 large cans chunk pineapple in juice, drained & juice saved
2 large cans crushed pineapple in juice, drained & juice saved

1 cup sugar, 2 tbsp flour, pinch of salt, mixed in a saucepan

Whisk in 1 3/4 cup reserved pineapple juice and 2 beaten eggs. Cook over moderate heat, stirring constantly until thickened. Add 1tsp. Lemon juice. Let cool.

Mix cooled dressing with the cooked and cooled pasta, refrigerate overnight in an airtight container.

Add reserved, drained fruit along with 8 ounce container Cool Whip and 2 cups miniature marshmallows. Mix thoroughly and refrigerate.

250 miles?? I believe #1 or #2 rally was when we got a prize for longest distance traveled!! = ) Zamboni donated it and it can be seen hanging from our main awning on site E 012 this year. It's around 440 mi. for us AND WORTH EVERY MILE ........ but oh how we all wish the price of fuel would come down.
