Sean and Rhondi, We are so sorry we missed this. Please do it again next year (or next month)!.
We have parked Bud for the summer and are doing a bit of refurb. But we will be ready to head out again in a few months. Keep us on your mailing list.

What a blast!!

Thank you all so much for an awesome time! We felt really welcomed in our little funkadelic Argosy What an awesome group of fantastic people! Made our first time out truly unforgettable! p.s. I totally enjoyed seeing everyone's set up and learning about their trailer(s). Plenty of cool ideas to steal for the eventual remodel ! Good time!!

San Marcos Rally

If you missed this rally, you really missed out! What a great time we all had at Pecan Park RV and campground. Sean & Rondi and Steve thanks for putting this one on, great time. Special thanks to Sean for the trips to the river and for me particularly for parking our rig for me. Loved seeing everyone, old friends and making new ones! Hope to see all of you guys at our Christmas Blanco rally the second week in December. More posts to come about our Christmas rally.......

You may not have to wait so long. Many of us have discussed getting together every 2-3 months in Central TX just because we are numerous and not far from each other. As for my birthday..thanks for the thought. I spent it buried in my cardiology book so I can go to ABQ for the restoration rally this weekend.

Dutch Oven Recipie

Who did the rice dish in the dutch oven on the second day? That was soooo good!

I believe you are referring to ole Frenchy's Jambalaya.

Also, recipes please for Oriental salad, jalapeno corn cassesrole, crawfish fettuccini and cheesy garlic grits. Ribs were outta site.

And the beany mild corny wet stuff I ate in little corn chip cups at someone's trailer, but was too busy being surrounded by entertaining people to remember which ones!

Garlic Cheese Grits

GARLIC CHEESE GRITS

1 Cup Grits,
2 Cups Water
1 Cup of Cheese, Sharp Cheddar, or cheese of your choice. We used a combination of Asiago & Sharp Cheddar.
Milk (see instructions below)
1 Stick Butter
Cayenne Pepper
2 Eggs
Garlic Powder to taste (start with tea spoon)
Salt to taste

Boil water then stir in grits and cook down to mashed potato consistency. Remove from heat and stir in butter , salt, cayenne, garlic and chopped or shredded cheese until melted. Taste & season to your liking.

In a one cup measuring cup beat 2 eggs and add milk to the 3/4 cup line. Then stir into the grits.

Place in 8 x 8 buttered casserole dish and bake at 350 degreed 45 minutes to one hour or until beginning to brown. Serves 6 to 8.

Eat while hot & enjoy.

For the Airstream Rally we tripled (x3) recipe and used Asiago in two & Sharp Cheddar in one. Baked in a Deep 9 X 13 Corning dish (brim full) which is deeper than Pyrex. A double (x2) recipe works well in a 9 x 13 Pyrex.

Cowboy Candy

COWBOY CANDY

Drain large jar (about 3 quarts +) sliced jalapeno peppers for 2 or 3 hours, until all juice is thoroughly drained. Use rubber gloves! (Hot) In a gallon glass jar with a good lid that doesn’t leak, put about 2 inches peppers, cover with sugar, repeat ending with sugar at top. Sugar will turn to syrup. If after a couple of days the peppers are not completely covered with syrup, add a little more sugar or Karo Syrup. Shake or turn jar at least once every day for 2 weeks. You can keep Cowboy Candy in that jar or put it in pint jars, but do not vacuum seal for it will stay for weeks on the counter. When serving cover a block of cream cheese with a generous amount Cowboy Candy. Your choice of crackers, but Wheat Thins work well. The cheese will spread better if allowed to softened.

Be careful, “Real Cowboys” are easily addicted!
