Glad you all enjoyed that...wait til you meet the directors...and you will! We are all so excited! We hesitated at first as we're going to Stone Mtn for Spring break and weren't sure about being out every other weekend. Luckily, when put to a vote the directors came through for me and the motion carried. I'm looking forward to returning to the fair grounds, my father on one of our trips from Tampa to the Mountians in about 75, won the Beachnut Tobacco Spitting Contest. Its been a thing of family legend. He's always had a sinus thing, and spits alot...mom says "hey look a spitting contest, right up your alley" a little while later we hear them announce dad over the speakers as the announcer says, "this doesn't look like your typical chewer, long hair, bermuda shorts, and a tank top" well it came down to a spit off... and Dad won. His reward, a brass spitoon, and kiss from the Ga Mtn Fair Queen...only problem was she refused to kiss old dad...first time he'd chewed tobacco and was sick as a dog!!!!! Only hope I'll give my kids something along those lines...might even see if Dad will let me take the spitoon home for a visit!

Wow! 10 posts in 24hrs.
I was beginning to think everyone had gone to work.

And the subject of food is on the table. Hallelujah!

Considering that we will be presenting a "How to cook Championship BBQ" sometime on Sat.; it seems only fair that we bring several BBQed items for Sat. Dinner.

One request please; unless watermelon is being discussed; food and spitting should be in separate posts. I have a weak tummy (and mind).

Raffle Prizes-Donation

Please accept our donation as a raffle prize: a pair of Nick and Nora Flamingos and Airstreams twin-bed sheet sets. We did not win anything at the Can Opener, but it was great fun! We thought we should start it up again.

Maybe there is a way we can work in a chili contest and share recipes.
Chili can be prepared at home and reheated if cooking from scratch after arrival is too much trouble.
We could group all the chili dishes together and number each on for scoring.
Might be fun if anyone is interested or already a “chili-head”.
We will be glad to furnish small sampling cups and spoons and whatever else is needed.

So, just how long did you live in Texas? Chili cookoff, Smoked Brisket?

Smoked brisket (Texas style) is absolutely one of my favarite things on earth. But, alas, Susan doesn't like it so I don't get to have it very often.

Sorry, been a GA. boy forever. But we have picked up a lot of cooking tips during our 10 yrs. as certified BBQ judges.

We generally cook or judge in sanctioned BBQ events:
MBA (Memphis BBQ Assoc.) 3 categories, all pork – Whole hog, Shoulder & Ribs.

FBA (Florida BBQ Assoc.) & KCBS (Kansas City BBQ Society) 4 categories – Pulled pork, Beef brisket, Pork ribs & Chicken.

We have cooked in a few Chili events because they are much more relaxed and not nearly as labor intense as the BBQ competitions.

The presentation I will do during the rally is basically the ABCs of how we cook for BBQ competition: Meat preparation (selecting, trimming, injection, rubs, etc.),
Cooking (duration, internal temps., direct vs. indirect heat, use of sauces). and if time allows or if anyone is still awake; cooking equipment, charcoal & wood, what BBQ judges are looking for, etc. We just won't have a 150 lb. whole hog to demonstate with. Oh, I almost forgot, there will be samples.

so the question begs asking.... "why won't we have the 150 lb hog to demonstrate with??" I for one would be happy to contribute to the purchase of a hog...er even a smaller piglet for ....ah .....demonstration purposes only.
I'm not sure yet what to temp your pallets with.... however I'm leaning to my white clam with lingini. But don't quote me on that, I'm not done thinking 'bout it yet.
