We won't be the only ones on the North GA. highways that weekend.
Tour De Georgia April 16 - 22

Depending on your travel day and chosen route, you might want to check out the race maps and schedule. Could be an opportunity to enjoy seeing the tour in person and/or being caught in a lot of traffic & temporary road closings.

2. Meats to be discussed and demonstrated.
Each catagory will have its own unique variations on (trimming, injection, seasoning, use of sauce, etc.)

e. Whole Hog - if anyone is interested we will do this last (the hog should be cooking while we speak)
3. Seasoning methods
a. Injections & Marinades
b. Dry Rubs
c. Brining
4. Sauces
a. Varieties & applications for different meats
b. Off the shelf vs. custom or homemade
c. Do’s and Don’ts (sometimes known as my way or the highway)
5. Methods of Cooking
a. BBQing vs. Grilling vs. Smoking
b. Fuels (charcoal, wood, gas, etc.)
c. Temperatures for cooking. Being "done" vs. "good eats".
6. Discussion
a. Questions and answers
b. For the Die-hards: The Whole Hog (everything you wanted to know)
7. Competition BBQ events (optional discussion if we have time or folks won’t leave)
a. Organizations and how to participate
b. How to become a BBQ Judge (or How to get free beer & high cholesterol)

Items to Note:

1. Start time? Sat. 10:30am (following group meeting at 10:00)
2. We will be discussing the ribs and chicken first in case there are individuals who are not interested in cooking brisket or shoulders. (those intimidated by large cuts of meat will be excused early)
3. Add your name to the attendees list. The number attending will be important for several reasons. (handouts, samples, will this class make?, etc.)
4. The syllabus is not sacred. It is open to suggestions, deletions, additions, etc. I will try to cover anything relevant. Anyone who would like to present their favorite BBQ technique or secret is welcome to join in.
5. Class objective: Have fun. Get some sauce on your shirt. Pass the post-test.

Here is a condensed version of the map for stage 6, on Friday 4/20/07. They are starting in Dalton at 11:00am, and expect to finish between about 3 and 4 pm!

I estimate that the bikes will probably go through Ellijay about 10:30 but will not tie up any traffic going North on 515, since there is an underpass for their route.

Also attached is a photo of last year's Tour as the bikes sped toward Ellijay on the Chatsworth Highway (Route 52, from Fort Mountain), and I caught them going downhill into town. Faster than I drive that section, I might add. Amazing.

Since I will be way on the other side of the world and opposite time wise - I will be enjoying a bowl of M&M's (with peanuts of course) and a full flavored Coke to keep me awake while I hope that some of you will post lots of pictures near real time for me to enjoy. I for one would like to see the pig on the spit!!!!!

How do I get there?

Ok now that we're all getting close to hitting the road I could use some help as to best route to get there.

Say I'm heading south on Rt 95 after I get thru DC which roads would anyone suggest?

When my older son was maybe six or seven, he saw his first group of bikers in a tour de Fayette County and he said they were a "heard of bikers! He doesn't like for me to tell that, but we're among friends here so I think it's OK!

just got back from a visit with my mom in Florida, this is the view from a road near her home...we did not get to talk to the owners though...
Also we saw two classic motorhomes, one argosy, and 7 trailers on I 75 going back home.
