No fair, gotta stop teasing us. I'm stuck in STL for the weekend. Can't get anywhere near a DO or your promo bread.

Folks Maggie sent me a bunch of stuff to read, kinda feels like homework! Been real busy for work. Must catch up.

I want folks to know how doable this bread is in the DO with charcoal.

Next loaf will be cranberry/orange/pecan.

Road loaf #5: Cranberry/orange/pecan

Yes, the last loaf is already gone....but we had help.

This one is a bit dark on the exterior, but delicious and perfectly done inside.

If you want optimal conditions and a picture-perfect loaf every time....you bake in a traditional oven.....and only a traditional oven.

This is a bread you mix one day and bake the next. When I set it out for the second, pre-bake rest this morning, it was overcast but otherwise quite pleasant outside. By the time the coals were ready less than an hour later, the wind had picked up, temps had dropped about 20 degrees and it was raining.

Nevertheless....there was no backing down at that point, so bake we did. Wind equals charcoal burning hotter. All part of the on the road experience.

In spite of some inconsistencies in exterior browning with the charcoal, this is an extraordinarily easy, versatile and predictably delicious bread that anyone can make.....in a traditional oven or your DO if you choose. I wish I could take credit for developing the original, basic recipe, but I'm simply not that clever.

Now that we have got the briquette #'s figured out, and baked this particular bread today...more dense than the others....we know it will work with charcoal.

Looking forward to sharing it in March with anyone who is interested.

This is, therefore, my last loaf post.

Yes, indeed.

Those of you with ovens in your trailers will have the option of using that if weather is not cooperative.

Chuck, another fine job!! Makes me want to be there.......NOW!!!

BTW folks, this weekend I had a sampling of the fish we will be having. Totally awesome, you will love it. Beautiful white fillets, about 1/2 - 5/8" thick. The 2 cookers, oil, hush puppy mix and fish batter are here at my shop now, waiting for the day. The fish, shrimp, and devil crab are tucked away, safe and sound.
