Brian, I would love the recipe for the tomatoe and goat cheese dish you brought. That was wonderful!

Awesome photos Jim & Lois!! Thanks so much for posting and taking those!
We made it home yesterday just in time for OKC 5pm traffic...back to city life!
We had a great time hosting the event and meeting new friends and getting to know others even better! I don't know if we'd have been able to stand having so much fun if it had not rained so much!!...but the rained stopped just in time for the open house and it was great...except for Jeff...so sorry for your injury and we hope you get back on both feet ASAP!
I will post pictures soon, I need to go out and enjoy this day before the next cold snap and rain comes in Thursday!

Carol--the olive paste-stuffed tomatoes are super easy--just hollow out cherub tomatoes, stuff, and top with a little goat cheese. If you can't find commercially prepared olive paste, you can make your own: equal parts black and green olives (no pits or pimentos)--about 1/2 C each, a clove (or 2) of garlic, half an onion, 2 T capers, 2 T red wine vinegar or lemon juice, 2 T olive oil, salt & pepper to taste. Add an anchovie or two if you're brave (I wasn't). Blend smooth in a food processor. Hint: it helps to load paste and goat cheese in separate ziptop bags, cut tiny hole in a corner and use as a pastry bag to fill and top--much simpler and less mess!
Here's a link to the strawberry angelfood cupcakes, too. Adjust bake time to 11-12 minutes for mini cupcakes.

FYI...in case you don't know...if you click on the first pic it will pop up larger then you can hit next to continue.
Also, here is a pic I took Thursday of Joe Sparks who came by to say hi...he will be coming to the future Midwest rallys in his '59 Caravaner. He was in town for a vintage BMW rally...and he & his wife are from Olathe!

That was a hell of a lot of fun. Rained on for days on end, and then broke my leg before I even got to eat my ribs.
But really, it was great to see everyone, and fun to get together. We are looking forward to the fall! Pun......
Final damage was a plate and several screws. I broke both bones and dislocated the ankle. Surgery on Sunday and I was home early Monday evening.
A very heart felt thanks to everyone for helping take care of the dogs and getting CK packed up and ready to travel. It solved a lot of problems and made a difficult time easier to deal with.
We have a great group.
Best Regards,
JD
