I turn ours on about 3 days before departure load the food the day before and turn a tank on and make sure that works and depart normally early morning. If I am loading food at destination, I cool as usual but no LP.

A three way fridge that is capable of cooling on twelve volts.
I understand that the three way fridges sorta kinda cool on 12 volt.

I left mine on during last trip - forgot to cut it off during a fuel stop on way down :/

I have a new 23 flying cloud.....going off grid next week.
Will the fridge run ok on LP without my generator running.........the owners manual isn't real clear on this point. Up to this point I've had 50 amp service while I camped.

That Kaboom is about as likely to happen as the number 2 engine of a 747 aircraft falling on top of your Airstream's air conditioner.
When you refuel your tow vehicle, the fire in your reefer, or furnace, or the water heater, is a long way away from the fuel nozzle.

Your modern 2-way refrigerator does require some 12v power to run the control board. If the fridge is all you're using (or if you have solar panels) you should be OK for quite a while, but you'll eventually need something charging the batteries even for just the fridge.

Yup, the refer will run on LP and you don’t need 50 amp service on a 23’ Flying Cloud, 30 amp will suffice. You will need to select LP on the ‘fridge so it knows what kind of juice to use...

You misread. The fridge will run off propane as long as you have 12v DC battery power to run the control board. You should be able to charge your batteries on the generator every day or two (depending on what other loads like radio, lights, water pump, fans etc.) and let the fridge run continuously.

Your fridge will run on LP also... 12volt is the output of your batteries, keep ‘em charged to handle lights and small drains (like the control board for the fridge) and your LP will run the fridge keeping it cold.
I’m assuming that if you are “off the grid” you at least have solar panels to service the batteries...? If not, the generator will charge them, also.

I was always afraid to run on propane, using DC while travelling, but often had a dead battery at the end of the trip.

Good one. Say, we accidentally left the propane on for a short move from one campground to another last week, and...absolutely nothing happened except our fridge stayed cold. Not a valid statistical sample, but I'm grateful to have achieved a good result like so many others.

Bigskyrider8: Your refrigerator should also automatically change over from 120 volt electric to propane if you simply turn it on and leave it in the AUTO mode. That way, when you plug into 120 volt power it will use 120 volt power, when none is available, it will automatically switch to Propane
On my 2014 FC 20' you do NOT want to push the "gas" button as that forces the refrigerator to propane, but also cuts the thermostat out of the circuit (strange, eh) so the thing will overcool and freeze everything in the refrigerator. The "gas" button is only for a testing to over ride the thermostat.
This is apparently a new feature on the 2014's and my dealer told me about it. I didn't believe them, but a careful reading of the Dometic manual confirmed what they said.
So, just leave the switch in AUTO and all will work just fine.
And yes the refrigerator takes a small amount of 12 volt power to run the control system, but unless your batteries are very very low, it should not become a problem.
Enjoy the Beartooth Highway and the campgrounds there. Some are very beautiful.

Tow with propane off because I'm cheap and like to make it last as long as possible.
Am schooled in Foodsafe; have never made myself (or anyone else) sick on the road. All it takes is a bit of menu planning, preparation, and observation of portable therometer. Frozen drink boxes make great ice packs. Or else, I just freeze water in large Ziploc bags. Extreme protein perishables like raw chicken are stuffed into AS freezer with lots of ice packs. I have travelled all day, and the packs were still semi frozen (and temp. was well below the mandatory 40F.)
Other things like dairy - I tend to buy on the road. Even though milk and cheese can be frozen, I don't like the thawed taste or texture.

Also while in tow my truck is charging the batteries a bit so I think it will not cause net drain from that bit of 12v draw
