I have a 2010 Interstate 3500 with a Mercedes Diesel engine. I took it in for the first service since I bought it and asked how much DEF was required. I was told this unit does not have a DEF tank.

Does it or should it?

The EPA law relative to Def went into effect in January 2011. So for most manufacturers, it was mid 2011 model year when def was added to the vehicles.

Unless it has the Blue-Tec badge on the side, your Interstate does not need DEF.

Your 2010 Interstate was probably built on a 2008 or 2009 Sprinter chassis. The BlueTec feature first appeared on MY 2010 Sprinters.

It's not unusual for Airstream to use up last year's chassis on a new model year. For example, my 2011 Interstate has a 2010 chassis.
Glass half full or half empty to an engineer is simply a glass that was over designed.
