I haven't actually checked out hotels in New Orleans to see if I could park my Interstate at any of them. Being a resident of the New Orleans metro area, I generally used my Honda for attending any in-town conferences.
Downtown hotels tend to rely on parking garages. Hotels in Metairie tend to have lots where vertical clearance isn't an issue, but that puts you several miles from downtown.
But your best bet is probably the French Quarter RV Resort, which is a Passport America urban campground very near to the downtown area. From there it is a short taxi ride to most conference venues.
Since FQRV can accommodate Class A motorhomes, you should have more than adequate room for an Interstate on their 30'×60' sites. It's not cheap; prices per night (without PA discount) are $105 per night or $680 per week. The PA half-price discount only applies for one night, Mon-Thurs only. But that $105 un-discounted campground rate is actually cheaper than what a downtown hotel room costs (a room at the Hyatt would set you back about $200 per night).
