Best way to LOCK or secure our Airstream?
Anyone have suggestions reviews on the best locks or way to lock up and secure the hitch?

Do a search for "Trailer Tongue Lock" and you will see sever different types.

Like HOWIE e says Do a search first. The subject has been discussed at length here.
Buy good locks ,pin lock,ball lock, tandem lock. Tandem lock serves two purposes, it stops the rocking forward and back and ties up both pairs of tires so they don't turn. Locks slow down the real thieves and stops the amateurs.

I echo what was said here earlier. Another deterent is simply disconnecting your pigtail (if yours can do that) and storing it in your house when your trailer isn't in use.

I asked about this as an alternative to wheel chalks, and was told that the battery is used to apply the trailer brakes and I would drain the battery quickly if I did that. Can anyone confirm if that's true, or how being plugged in would affect that?

"Pigtail", or "umbilical cord"? I think the poster was referring to the black cord, not the breakaway cable.
Pulling the breakaway cable and locking up the trailer brakes is a bad idea. The brakes will get full current, and if the battery doesn't go flat first the brake magnets will be damaged.

No, I was referring to the 7-pin umbilical cord you plug into your tow vehicle not the breakaway switch.
