The more the better. Clear the site with the back of your trailer. This lets you start the turn before the axles get to the pivot point. Often on thinner sites you will have to almost touch the edge of the site with the axles so take as much advantage as you can to keep from jackknifing.

I have found that much of my challenge with back tends to be the width of the road that I'm backing from. When I first started, I always focused on and intimidated by the width of the trailer space. Instead, it's really been an issue of how wide I can or cannot swing my truck and obstacles on the roadway/path.
Also - this little "trailer reversing game" online helped me a lot with visualizing and understanding the trajectory of the trailer. I don't actually follow their little zig-zag road, but rather work on a clean 90-degree backing scenario.
