In photo 1, the channel is for a fabric tire protecto that was attached when camped for an extended period of time to provide some sun damage protection for the tire(s). I believe that these were offered through the "Store" when our coaches were new, and were likely made by Zip Dee as the fabric matched that used in the awning in most cases.
In photo 2, the window gasket material, I would think that it would still be available as similar windows were in use until very recently. Have you tried checking with a vintage knowledgeable Airstream dealer or authorized service center?? If it is no longer available, avoid silicone -- try either Parabond or Vulkem as either will seal to aluminum and last many times what silicone will when in contact with aluminum.
In photo 3, I am baffled by the handle. I can't think of anything in my '78 Minuet 6.0 Metre that has a handle like that. It is too long for a roof vent operator, and our coaches didn't have crank mechanisms for the windows. My only thought is that it is some form of part for an exterior patio awning -- posibly a part for the arm to hold a set adjustment -- or possibly part of a travel lock.
It looks like you are making great progress on your restoration!
