My "pressure test" was performed with city water. I did, however, use one of those in-line regulators attached to the end of the hose before entering the trailer.

I ran the PEX right up to the water heater, no worries. In fact, the fittings I used on the water heater itself are PEX rather than metal fittings. They're made to withstand the hot water, and the outside of my water heater is cooler than the water running through the PEX, so it shouldn't be an issue.
