I'll take that Paula. It's actually a California traditional song chorus from the 1800's. Many people performed it in various ways, but it is indeed about going to "see the elephant". This is a colloquialism spawned during the Gold Rush to describe the intense curiosity over the discovery of gold in California.

Refers to finding gold and going to San Francisco to spend it all on liquor and women.

The Tennessee Waltz Tom Jones did an awesome version of this with the Chieftains (Long Black Veil, 1994), I think Frank Zappa helped with it too.
