As I sit in my TT making breakfast, cast iron skillet, bacon, fresh coffee, thinking it doesn't get any better then this. A view of some NM mountains at sunrise is a bonus.
What is the best bacon? It can only be properly fried in a very darkened, some would say dirty, cast iron skillet, next to a couple of eggs (Lovastatin is handy...).
I was convinced I had to try a Virginia Bacon. It is way to salty, way to much rind, I slice it way to thick, it is way to good.
What is yoru must buy brand?
Jac in heaven...

Favorite is thick sliced Burger's country smoked bacon: taste, texture, aroma...we love it WAY too much. It's a Missouri product and may not be available widely, but it's worth the hunt. I keep that and their small trimmings package on hand to dice and flavor other foods. The company offers a variety of ham/bacon offerings. YUM! ~G

I agree with maxandgeorgia,
Burgers Smokehouse bacon is great, I prefer the pepper, but the city or country is fine also. They mail order and also have great hams. I usually buy the ends and pieces, same bacon and a lot cheaper.

The bacon we buy from our local butcher/deli. it is amazing... thick, peppery on the edges and it doesn't shrink to half it's size when cooked. yum. I am glad we are posting such serious and moving posts
OK....you guys did it to me!! It was a healthy bowl of oatmeal. Now I have to go upstairs and fry up some bacon...............might even go out to the Airstream to fetch the cast iron skillet. YUMM!!

Burger's or J.C. Potter's thick sliced. We have Blue and Gold here in Oklahoma, but I don't know if it's available in other locations. I drive to MO. to buy Burger's when I can. It's that good, but hard to find unless you order it on line.
Being from the Detroit area we used to go to the Windsor Farm Market across the river and get Canadian bacon. It was the best. I think the vendors were Hungarian. I guess its a lot like what other folks call back bacon, but much better than what you find on an egg mcmuffin.
