We spread our hush puppy mix out on a three inch wide paddle, and cut off little strips of batter, about the size of a thick french fry. It makes hush puppy fries. They cook quicker, and you don't end up with the doughy center like you do when you drop them from a spoon.

Have never put onions in them that I can remember. I'm pretty sure most religions ban the use of onions in hush puppies, as most deities prefer their hush puppies without them, however we have done jalapeño hush puppies, which pleases our tiki to no end...

Except that he does tequila shooters when we have jalapeño hush puppies.

Ahh yes....up North here we like to stack our 'hush puppies' and slather 'em with butter & maple syrup, real sole food...... ummmmm good.

Saw two nice old Southern ladies darn near get in a fistfight over wether onions should be in hush puppies. Me, I like them either way, but the Jalapeño version sounds even better.

Of course, my fancy version of corn bread includes both onions and fresh jalapeño bits--which is also heresy in the south. I do conform to tradition and bake it in a dedicated iron skillet that only gets used for cornbread. Has a black finish inside that's slicker than Teflon after 44 years of use..and our marriage, for that matter.

Rich, respecting tradition, to a point...

Cornbread

Oops, drooling over the cornbread caused my computer to post.

But, as I am one of those folks who "cannot eat just one" the cornbread has to be approached with caution.....

I am also a non-traditionalist when it comes to cornbread! Except for the cast iron. That's where I draw the line. If it's not in a cast iron skillet, you might as well not cook it...

Cast iron seems to be the best way to cook a lot of things around my house. I have to save space for a small cast iron skillet in the AS it we have to eat at Cracker Barrel all the time....

Hm, we do that anyway...😄

has always been used to make various plumbing fixtures...In Kohler, Wisconsin...they make some of the finest cast iron plumbing fixtures found anywhere...
