First pumpkin pies of the season (pic)

Cold and windy rainy day. I celebrated by baking the first two pumpkin pies of the season . . . made with Splenda:-)

Oh, cool! Do you use the granulated Splenda? I've gone to it for everything I bake. I sub one-for-one for sugar and no one knows the difference. -- John

Yup, granulated Splenda. The brown Splenda has a little real sugar but makes pretty good caramel rolls. I'll throw up a pic next time I make them.

Nice job.

This is from this past Labor Day, the box oven was built by me in 1994, pie is just a store bought apple, but it hit the spot.

Gary,

It has a door made from the flaps of the box and it is hinged up and is out of the pic right now.

The box was a computer monitor box, but I fitted cardboard panels inside of it and each is wrapped with the heaviest tin foil I found, all original construction. The top panel goes in 1st, back fitted next, sides, bottom, rods are aluminum, hole in bottom of box to allow air in, several holes in top up high to let air flow. It you make one too tight, coals go out. The plate is elevated off of the bottom and sitting on 3 rocks.

Temp does not go home oven high, but it will hit 325+ easily, no preheating, no charcoal taste and just a fun thing. We have done pizza, cakes, cookies, potatoe cassarole, if it fits, it cooks. You can add coals during later stage of cooking if req'd.

Pot of coffee and cinnamon rolls in the AM, that starts a great day.

I didn't invent it, saw my first one at a BSA leaders training weekend.

The pie looks good! Yum!

We use Splenda for everything but cookies, and it works great. If a recipe calls for 1 1/2 cups of sugar, I will make 1/2 cup of that real sugar, as we like the taste better. Splenda Brown is wonderful for cinnamon rolls, monkey bread, bread pudding, etc., just like it is.

We substitute a good whole wheat flour for part of the white in things like banana bread, pumpkin bread, etc. Boosts the fiber content, good for so many things, and is barely noticeable. Cookies need to be left alone, IMO.

Just made one last night. for the last 3 weeks all of the grocery stores here did not have any canned pumpkin. Something happened to the crop they were told. whatever it was must be over because I found some yesterday.

Libby Co., is based in Morton, Il, about 30 miles from us. They lost most of their crop last year, and we were told there would be a shortage. I squirreled away a few cans in the cupboard for this year.
