Maggie, that trifle has my mouthwatering! I'll bet it is as good as it looks. Enjoy.
On second thought....your family probably won't like it, so, pack it up in a cold box and send it to me. I'll "sacrifice"....and let you know if it's ok for you to make one for them! LOL!

I gig frogs wherever I can find them, fry up their little legs and then save the eyes in a Baggie in the freezer....til this annual family gathering, where I turn them into a fruit salad and foist it upon the unknowing as pasta.




The frog eyes in this salad are Acini di Pepe, a tiny, round pasta...cooked up, they look like frog eyes....hence, the name.

Made with an old-fashioned, cooked dressing, lots of pineapple and mandarin oranges, a little cool whip and miniature marshmallows. Delicious!

This recipe was in a church cookbook Doug's Mom gave me probably 25 years ago, before we were married. I first made it for this annual June family gathering, and it was such a hit I have made it every year.

I always take leftovers to the Moraine View Rally the following week, as it will keep well in the frig for several weeks....tho it never lasts that long.

Sweet SIL is diabetic now, and I have a diabetic sister in law, so I cheat and use Splenda for the dressing and sugar free cool whip....I kind of hate so much artificial stuff, but it's only once a year and ya do what ya gotta do.

I am enjoying having my daughter and hers here with me, and all the cooking and clean up.....kind of like riding a bicycle, you don't forget how.

My yard guys have just been here to mow and trim my shrubs in front, allowing me to give their sweaty selves a big glass of iced tea.

I appreciate those young men. They are reliable and do a good job.

Cute, Maggie. I just can visualize you....out in the bogs somewhere, frog gig in hand, searching for helpless little frogs! NOT!

Family gig over.....not at my house for the first time since its inception 30 years ago...but at son's, and it was good.

Much less stressful for me, for several reasons. Family things.

The trifle was delicious, the slight alcoholic content of the raspberry sauce could be tasted, making it seem slightly decadent in spite of all its artificial ingredients.

Emma has adopted sweet SIL as her most recent Grandpa substitute, telling me quite happily that he plays with her like Grandpa did, and she likes that. Such a sweetie, tho would like to stay a little girl forever.

Daughter is off visiting a friend, SIL is in his favorite spot here....on the patio, enjoying the yard and fresh air.

No patios at their apartment in the big city...he loves it out there.

Going to build a fire in very excellent fire pit, make some popcorn after awhile and we'll call that supper.

They head back tomorrow, it will be very quiet here, and I will become a one vehicle household. Yikes.

Been a good visit with them.

Maggie,

It sounds like a great time! I saw your Trifle picture and it reminded me of a friend of ours who always made Trifle when we got together. She learned it from a neighbor when they were stationed in the UK while in the Air Force. We haven't seen them in a while as they moved to NC from Florida several years ago. Yours looked great and it sounds like it was enjoyed by all.

Maggie, the notion of 'frog gigging' brings to memory....during ,and after depression years...my Dad and brothers provided the meat and fish for our large family (8 kids)....Mom and Dad were very much in love, (wink, wink). Mom had the 'victory garden' and chickens.
Anyway, Dad and the boys would go out in Dad's studebaker with a big metal Galvanized tub he put in the trunk. They would return home in the morning, from a mostly all night trip, and all of us would go out and gather round the trunk, as Dad opened it up....these big old bullfrogs, that were playing dead in the trunk....suddenly came alive....jumping all over the place...searching for freedom in our back yard. We kids would chase after them, as Dad reminded us to not let any get away!
We had no idea we were eating so well, as kids till I grew up and saw 'frog legs' on a French restaurant menu for big $$ for 2 skinny little frog legs. Those old bullfrogs had big fat legs....and they sure were good.

Very excellent fire pit....which they kept going until well after I had gone to bed.

The cooking grill that came with it is stainless steel, which cleaned up beautifully and can be stored in the garage but for its periodic use to grill large quantities of animal products.

Have I mentioned how happy I am with this purchase?

Company is gone, little house is tidied and vacuumed...it was a lovely weekend, but has been a very busy 5-6 days...nice to be still for a bit.

Going to write a final check for the Interstate tomorrow , run her thru Blue Beacon Truck Wash for a celebratory spit and polish, and try to get all errands run in one trip out in my new daily driver.

We'll see how I do, keeping my trips out and about to a minimum.

Next...the Moraine View Rally in just a few days, always sort of the jumping off point for the summer.

I'm looking forward to it, and to seeing these good folks.


Many years ago I picked up two little plastic cards with this image etched onto them.

One I gave to a friend who needed it, the other I kept for myself...because I needed it, too.

I've been seeing something thru for a number of years, left from my pre-retirement days...don't ask, you really don't want to know ...but I really believe in these words, in hanging in there, trying to do what's right and just, following your knowledge, beliefs, instincts and best judgment...wherever they take you, and in spite of when it gets really, really hard.

And, in spite of the betrayal of some who should be on your side, and whose professional responsibility it is to help you.

You just get up, keep on going, and follow the path that lays itself out in front of you.

Eventually, you begin to see a light at the end of the tunnel...tho it may not be the same tunnel you started out in, nor may the light you see be the color and hue you thought it would be.

But...never, ever, ever give up on something that is really important.

It's how change happens, because people persevere in the face of adversity.

I'm not at the end of the tunnel yet, but I am starting to see it.

What is that saying..."if you can't outrun them, outlast them", or something like that?

That would be me.

Maggie, for whatever trials and tribulations you face, I am sure you will persevere. Though we have not yet met in person, I have learned some about you...from reading between the lines of some of your postings. I sense a strength and determination in you, that some folks do not possess. You have 'grit'!

Ohhh, the stories I could tell ....and some, I have, because they needed to be told.


Just talked with my friends in MN....I am starting to get really pumped for summer travel.

That's one of my faves.

The other is "The last act of defiance" showing a mouse making a very obscene gesture to the hawk about to sink his talons into the mouse in question.

Yep... that was one of Doug's favorites, too, and something we said often while enjoying retirement together.

I still say it...part of my gratitude for what is good in my life, my ability to travel, etc.
