New Engine & Transmission 81 Excella 28'

Hi...looking for experienced shop, preferably in Florida, to install all new/rebuilt engine & transmission in an 81 Excella 28'. Any suggestion or comments and best procedure for this would be great. Any upgrade info.. would be great....looking to do new instrument dashboard also. Misc sheetmetal needed. Basically would like to do a total refurb on the chassis and electrical.
Thanks in advance for your input...I would be willing to drive SE USA for the right deal...
