Air Forums has been used as a means for organizing many rallies. Why not use Air Forums to organize a caravan? More specifically an Interstate (maybe more broadly an Airstream Class B) caravan.
Pick a few spots near your "neck of the woods" that others would find interesting and post it on Air Forums. See what happens. We have an Interstate and we're always looking for reasons to go to Texas!

I like your idea of an Interstate caravan. Consider a few places near where you live and think about what it would take to go from place to place with a few stops in-between. There's no hard and fast rule about how long a caravan has to be. Could be just a few days.
Some ideas that come to mind: Shiner Brewery (there's camping in a nearby county park), Painted Churches - they're all over the hill country, Gruene Hall, Austin.
How about choosing a particular "road" to follow. Something in east Texas, or perhaps along the Rio Grande, a road that parallels one of the interstate routes maybe, or one of the many historic "trails" in Texas.
My suggestion would be to look for county/city parks as they generally have more availability for camping rather than state parks. For that matter, throw in a few boondocking stops - even if it's just a parking lot.
We'll be in Texas in October. If it comes together during that time we'd be happy to participate. We're also open to other times during the year.
