We have found that the roll-away dining table to be about useless. If you extend the leaves and sit on the couch then it's almost impossible to get out from there to get anything else. We opted to leave that at home and take individual TV trays. We leave an opening between the trays to allow either of us to get up for whatever. We store the trays where the roll-away goes.
I find the L-couch to be uncomfortable because I'm short. I need something behind me to support my back. Having the extra bed is nice because the wife chases me out there to sleep on it when my snoring gets too loud. . She's short enough to sit on the section by the window, feet against the storage table, so it's comfortable for her.

My simplehuman towel holder is mounted per perpendicular to the window wall and far left side under the cabinet into the "wood", not the metal trim.

It's on wheels, so yes, but we have carpet runners in front of the L-couch and down the main walkway. The wheels are small and have a hard time with the carpet. Also, we got ours used and the wheels hadn't been lubed in a while so they were sticking. As I recall, we would also move our plates and condiments to one side then drop a leaf so we could get out from the couch.
We bought an ottoman that I used as a table for eating, my laptop and resting my feet to allow me to push against the couch to support my back. The ottoman opens for additional storage. It's kind of a portable office.

“secret cabinets”
We have owned our 2018 23CB for a year and a half, and only recently discovered what we are calling the “secret cabinets.” We always thought these were kick-plates under the pantry drawer and left side clothes closet.
We are a bit surprised that there are no handles or knobs to make opening these handy spaces much easier, and one of my projects before embarking on a couple of trips in the near future is to possibly put small knobs on them.
Anybody done this? Is there some reason they were not so equipped as built?

Sure, they are great little storage areas... We put matching handles on both doors... looks great and works even better.
I see you have an International Serenity (as on ours). I'll look up the link to the handles.

We also use the compartments for extra storage. Great wine cellars. We installed push pull knobs found in the Interstate models. This way they are flush when not in use and out of the way.

Now it’s a search for the handles that “look right.”
Off on a quick trip to Europe tomorrow, back in a week, with a list of small Airstream projects (plus jury duty), before the road trip fun starts in early July! Never thought retirement would be so hectic.

When we picked up our AS the tech pointed out the ‘secret cabinets’ and said that Airstream didn’t put handles on those doors because of the electrical wires that run through that area. As I recall, I think there is a string or two of romex wire running over the wheel well. I suppose it’s a liability issue.
I see no reason not to utilize the space as long as your mindful of the wires. I think our cabinets are stuffed full of lightweight items like TP and paper towels.
Found these flush mount pull rings on Amazon.

Thinking a low height piece of white laminated board in the back of the ‘secret cabinets’ would help protect those cables. Any ideas how this can be attached yet be removable - pull out of slots so area can be serviced if needed?
We haven’t had time to investigate but thought the great minds here could help ponder idea.

Well, actually I can't; sometimes these projects kind of run together!
Anyway, I ordered the handles through my local Airstream dealer. They are so helpful, their parts department is a delight to work with.

Ok so here is some info.
On my 2014 International’s original design sheet....Airstream shows pull handles to be installed on the two “secret cabinets”, but they were omitted from the built, probably due to cost. (See below drawing).
I purchased my two pulls from Airstream while at the factory, but you can call an order a set to match you Serenity, PS.... they are not cheap.....I think mine where about $25-$30 bucks each.

Before the TV trays, we used it to store bottled water and sodas. It adds too much weight in the front for traveling but it's OK for when you're in the CG.

I have been getting some odds and ends done on the Air Stream since I retired. Right now we are working on the Air Stream Barn. Natalie’s last day for school was last Thursday and next week she is going home for some quality time with her mother. So I have alittle time to finish putting the hemlock in the front and backside. Then we will get the Air Stream on the road...back to Grayson Highlands state park for the Wayne Henderson guitar competition the third weekend of June. Then maybe Smokies or who knows.
I’m not sure why the first pic is sideways a resized it to medium.
