replacing 71 TW galley tambour

I want to repair and replace the tambour in the sink/ oven cabinet. Before I start tearing it apart I am looking for suggestions on the easiest way to do it with the least dissassembly of the cabinet. I am hoping there is a way short of taking out the sink, counter and oven. I am planning on repairing the existing tambour and reinstalling it. At this point I don't want to put in cabinet doors etc. but might consider this if getting at the tambour tracks is too much work. (so I will consider all suggestions). There are 3 sections of tambour: under the oven, in front of the furnace and just below the counter.
