I've seen the six-sleeper 25 footers. The arrangement is corner bed (2), foldout couch (2 very cozy!), and drop down the dinette (2 only if they're quite small). Six-sleeper is a bit of a stretch if you ask me.
Camping with a 25' Airstream and a family of 5 might work with kids topping out at ages 13-14. This might work better if you were able to hang a bunk like days of old -- but the hardware is not available.
My 25' FB sleeps a third person on the couch without changing anything; the couch platform next to the fridge does pull out maybe 8-10" but isn't real strong. I can drop the dinette for a fourth person easily enough. The problem with any of these is when kids sprout up -- but they won't want to camp when they're older teenagers anyway. It might work for a larger child to have the adventure of a small tent with a thermarest for most nights; treat the trailer inside as a bivouac option and squeeze everybody in there for stormy nights.
