Our 2002 19' Bambi also has the bed located where yours is and has two pieces of plywood supporting the mattress. That plywood is not very thick, but is good quality, void-free plywood. One of the pieces has a 5"-6" (if I remember the size correctly) access hole for the water heater valves and that hole is simply open. The mattress bridges it without problem. In other words, you might not need the deck access plate unless you do not want the open hole.

Getting good, void-free plywood is not easy. One possibility is so-called Baltic birch plywood. It commonly comes in 5'x5' sheets and most of what is sold today has nominally interior glue. Your use is interior so that should not be a problem and the glue is good and the plywood is truly void-free.
