I was looking at the 75th anniversary edition bambi that David Winick designed. The rear of that unit makes so much sense. I would love to have the same design (layout) in my 25' Safari

Has anyone attempted replacing the rear bed with a foldout type of bed?

Im looking for ideas...any input would be great.

I can't see where a conversion would be a huge problem, unless there's a lot of mechanical stuff under the bed.
The flooring might even be compplete under there.
The disadvante is that you will have to make up a bed every night, and then the bathroom door still won't open the way you would like it to.
The nice thing would be that you have a second sofa to use during the day.
We made a compromise where we can leave a bed made up, and only slide out 18 inches to make a 52in wide bed for sleeping, but during the day we have a nice comfy lounge for naps or reading etc.
