I would call Airstream, or Colaws salvage, and see if those parts are still available.
My 71 had a simple lock mechanism on the folding leg,( spring and 2 tabs) and a clasp on the table extension to secure it against the stationary piece.
Maybe you can adapt some solid hardware to do the job for you.
